Can You Freeze Dry Butter?

Not recommended
Quick Answer

Not recommended. Butter is almost entirely fat, and freeze drying only removes water — so there's essentially nothing to dry.

Freeze Drying Suitability

This is not recommended for freeze drying. Butter is around 80% fat with very little water, and fat cannot be freeze dried, so it stays greasy and goes rancid.

How to Prepare It

There's no effective prep — the fat content makes it unsuitable for freeze drying.

Expected Texture

It doesn't dry to a stable state; it stays oily.

Storage

Even with the water removed, it doesn’t store or perform well after freeze drying, which is why it isn’t recommended.

Rehydration

For storage, canned or powdered butter products are far better options.

Common Problems

With almost no water to remove and fat that can't be dried, butter simply doesn't work.
