Common Questions

Does freeze drying kill bacteria?

No. Freeze drying is a preservation process, not a sterilization process. It does not kill all bacteria or pathogens that may already be present in food. Removing water greatly slows microbial activity, but microorganisms can survive in a dormant state and become active again when the food is rehydrated. That is why safe ingredients, clean handling and proper cooking (where needed) matter.

Can you freeze dry raw meat?

Technically, some raw meats can be freeze dried. However, freeze-dried raw meat is not ready to eat — it should still be cooked before eating unless it was fully cooked before freeze drying. Raw meat projects are reviewed case by case.

How long does freeze-dried food last?

It varies by food, residual moisture, fat content, packaging and storage conditions. Many properly freeze-dried foods can last for many years in high-barrier packaging stored in cool, dark, dry conditions, and some products may potentially last decades. High-fat foods generally have a shorter storage life because freeze drying removes water, not fat.

Do you remove 100% of the water?

No. Freeze drying removes the vast majority of a food’s water — approximately 98–99% is typical under appropriate processing conditions — but a small amount of residual moisture remains. Final moisture levels vary depending on the food, product thickness, load and processing conditions.

Does freeze drying preserve nutrients?

Generally very well, especially compared with high-temperature drying methods, because the process uses low temperatures. Nutrient retention varies depending on the food, the specific nutrient, preparation method, processing conditions and storage.

Why does packaging matter?

Freeze-dried food is very dry and porous, so it can quickly absorb moisture from the air and is vulnerable to oxygen and humidity. Good packaging — sealed promptly after processing — is what protects the texture, flavor and storage life you paid for.

Which foods can you freeze dry?
