Storage
Once fully dry, seal it in Mylar bags with an oxygen absorber and keep it cool, dark and dry. Because it is low in fat, properly sealed it stays shelf-stable for a very long time.
Rehydration
Eat dry as a novelty snack; it doesn't refreeze back to normal ice cream.

Very fatty premium ice creams dry a bit less crisp; standard ice cream works best.
