Mango is an excellent freeze drying candidate. It has moderate water content and high natural sugar, which produces intense flavor and a pleasant crunch. Ripe (not overripe) fruit gives the best results.
How to Prepare It
Peel the mango, remove the pit, and slice into even pieces about 6–10 mm thick. Uniform thickness helps everything finish drying at the same time. Lay pieces in a single layer without touching.
Expected Texture
Expect a light, airy, crisp texture. Because of its sugar content mango can be slightly chewy or brittle depending on slice thickness — thinner slices are crunchier, thicker pieces keep a little chew.
Storage
Once fully dry, store in airtight packaging (Mylar bags with an oxygen absorber, or sealed jars) away from light and humidity. Properly sealed, freeze-dried mango can last for years.
Rehydration
Freeze-dried mango is usually eaten dry as a snack. It can be lightly rehydrated with a little water or added straight to cereals, trail mix, smoothies and baking.
Common Problems
The most common issue is stickiness or incomplete drying from slices cut too thick or from very overripe fruit high in sugar. Keeping slices even and not overloading the trays solves most problems.
