Can You Freeze Dry Milk?
Yes. Milk freeze dries well into a powder; lower-fat milk stores longer than whole milk.
Freeze Drying Suitability
This freeze dries well. Milk is mostly water with some fat; skim and low-fat versions store best.
How to Prepare It
Pour a thin layer into a tray lined for liquids. Arrange everything in a single, even layer on the trays so it dries uniformly.
Expected Texture
Dry powder or brittle flakes that dissolve in water.
Storage
Once fully dry, seal it in Mylar bags with an oxygen absorber and keep it cool, dark and dry. Because it is low in fat, properly sealed it stays shelf-stable for a very long time.
Rehydration
Reconstitute with water for drinking, cooking and baking.
Common Problems
Whole milk's fat shortens shelf life; use low-fat milk for longer storage.
