How to Prepare It
Cook fully, trim as much fat as possible, and dice or shred into even pieces. Arrange everything in a single, even layer on the trays so it dries uniformly.
Expected Texture
Firm and dry; tender when rehydrated in a hot dish.
Storage
Freeze drying removes the water but not the fat, and fat slowly oxidizes and turns rancid over time. Sealed in Mylar with an oxygen absorber and kept cool and dark it keeps well, but its shelf life is shorter than lean foods — use it sooner rather than storing it for years.
Rehydration
Rehydrate in soups, stews and meals; use within a shorter window than lean meats.
