Can You Freeze Dry Soup?
Yes. Soups and stews freeze dry excellently into lightweight, just-add-water meals. Lower-fat, broth-based soups give the best and longest-lasting results.

An excellent candidate. Broth-based and vegetable soups excel; very oily or heavily cream-based soups store less long because of fat and thickeners.
How to Prepare It
Cook the soup, then spread in a shallow, even layer (draining excess oil helps). Chunky soups dry well when pieces are bite-sized.
Expected Texture
Dries to light, brittle pieces or a powder-and-chunk mix; rehydrates back into a full soup with its original flavors.
Storage
Seal in Mylar with an oxygen absorber. Low-fat soups store for years; skim fat before freeze drying for the longest life.
Rehydration
Add hot water, stir, and let it sit a couple of minutes to return to a ready-to-eat soup.
Common Problems
High fat or heavy cream shortens shelf life and can go rancid. Skim fat and favor broth-based recipes for storage.
