Can You Freeze Dry Basil?
Yes. Basil freeze dries excellently, keeping far more color and aroma than air-dried herbs.
Freeze Drying Suitability
This is an excellent freeze drying candidate. Basil is watery and low in fat, so it dries fast and keeps its fresh flavor.
How to Prepare It
Wash, pat dry and spread whole leaves in a single layer. Arrange everything in a single, even layer on the trays so it dries uniformly.
Expected Texture
Very light and crumbly, crushing easily into flakes.
Storage
Once fully dry, seal it in Mylar bags with an oxygen absorber and keep it cool, dark and dry. Because it is low in fat, properly sealed it stays shelf-stable for a very long time.
Rehydration
Crumble into sauces, soups and dressings, or store as whole leaves.
Common Problems
The dried leaves are fragile; store gently to keep them whole until use.
