How to Prepare It
Cook fully, drain, and spread in a single layer. Arrange everything in a single, even layer on the trays so it dries uniformly.
Expected Texture
Crunchy dry; soft and creamy when rehydrated.
Storage
Once fully dry, seal it in Mylar bags with an oxygen absorber and keep it cool, dark and dry. Because it is low in fat, properly sealed it stays shelf-stable for a very long time.
Rehydration
Rehydrate quickly for meals, or grind into instant bean powder.
Common Problems
Very few; fully cooked beans rehydrate far faster than raw dried beans.
