Freeze Drying Suitability
This is an excellent freeze drying candidate. Blueberries are low in fat and high in water, making them ideal for long shelf-stable storage.
How to Prepare It
Their waxy skin slows drying — pierce or lightly crack each berry, or halve the larger ones. Arrange everything in a single, even layer on the trays so it dries uniformly.
Expected Texture
Crisp, hollow and sweet, dissolving quickly on the tongue.
Storage
Once fully dry, seal it in Mylar bags with an oxygen absorber and keep it cool, dark and dry. Because it is low in fat, properly sealed it stays shelf-stable for a very long time.
Rehydration
Great dry in trail mix or baking, or rehydrate in a little water for oatmeal and pancakes.
Common Problems
Whole berries with intact skin can trap moisture inside; always break the skin first.
