How to Prepare It
Slice evenly; smaller pieces hold together better. Arrange everything in a single, even layer on the trays so it dries uniformly.
Expected Texture
Crisp and crumbly, more like a cracker than fresh bread.
Storage
Once fully dry, seal it in Mylar bags with an oxygen absorber and keep it cool, dark and dry. Because it is low in fat, properly sealed it stays shelf-stable for a very long time.
Rehydration
Use as croutons or crumbs; it won't return to soft, fresh bread.
Common Problems
It becomes fragile and doesn't rehydrate to fresh texture; expect crumbs.
