How to Prepare It
Cook fully, drain and rinse with hot water to remove fat, then pat dry. Arrange everything in a single, even layer on the trays so it dries uniformly.
Expected Texture
Crumbly and dry; tender when rehydrated.
Storage
Once fully dry, seal it in Mylar bags with an oxygen absorber and keep it cool, dark and dry. Because it is low in fat, properly sealed it stays shelf-stable for a very long time.
Rehydration
Rehydrate for tacos, chili, pasta sauce and meals.
Common Problems
Any fat left behind will limit storage; the more you rinse, the longer it keeps.
