Can You Freeze Dry Honey?
Not recommended. Honey is concentrated sugar with very little water, so there's essentially nothing to freeze dry.

It stays a thick, sticky syrup rather than drying.

Rehydration
Honey already lasts virtually forever, so freeze drying serves no purpose.
Common Problems
Too little water and a sugar structure that won't sublimate mean it simply won't dry.
