Can You Freeze Dry Fruit Juice?
Yes, with conditions. Juice freeze dries into a tangy powder, but high sugar can make it sticky.
Freeze Drying Suitability
This can be freeze dried with a few conditions. Juice is sugary water with no fat; the sugar is what makes drying trickier.
How to Prepare It
Pour a thin, even layer into a lined tray. Arrange everything in a single, even layer on the trays so it dries uniformly.
Expected Texture
Crisp or slightly sticky flakes and powder.
Storage
Once fully dry, seal it in Mylar bags with an oxygen absorber and keep it cool, dark and dry. Because it is low in fat, properly sealed it stays shelf-stable for a very long time.
Rehydration
Grind into drink powder and reconstitute with water, or use as flavoring.
Common Problems
High-sugar juices can stay tacky; a thin layer dries most evenly.
