How to Prepare It
Separate the arils from the pith and spread them in a single layer. Arrange everything in a single, even layer on the trays so it dries uniformly.
Expected Texture
Crunchy on the outside with a sweet-tart pop; the inner seed stays crisp.
Storage
Once fully dry, seal it in Mylar bags with an oxygen absorber and keep it cool, dark and dry. Because it is low in fat, properly sealed it stays shelf-stable for a very long time.
Rehydration
Sprinkle over salads, yogurt and desserts, or snack straight.
Common Problems
The hard inner seed is edible but noticeable when dry — that's normal.
