Can You Freeze Dry Raspberries?
Yes. Raspberries freeze dry into delicate, intensely flavored crisps that keep their bright red color.
Freeze Drying Suitability
This is an excellent freeze drying candidate. Raspberries are fragile and watery with almost no fat, so they dry quickly and store well.
How to Prepare It
Leave whole and handle gently; spread in a single layer so they don't crush together. Arrange everything in a single, even layer on the trays so it dries uniformly.
Expected Texture
Airy and shatter-crisp with a tart, concentrated flavor.
Storage
Once fully dry, seal it in Mylar bags with an oxygen absorber and keep it cool, dark and dry. Because it is low in fat, properly sealed it stays shelf-stable for a very long time.
Rehydration
Snack straight, crush into powder for yogurt and drinks, or scatter over desserts.
Common Problems
They are delicate — the dried berries break easily, so pack them carefully.
