Storage
Freeze drying removes the water but not the fat, and fat slowly oxidizes and turns rancid over time. Sealed in Mylar with an oxygen absorber and kept cool and dark it keeps well, but its shelf life is shorter than lean foods — use it sooner rather than storing it for years.
Rehydration
Rehydrate for meals and chowders, or use as a pet treat; consume sooner than lean fish.
Common Problems
Oily fish goes rancid faster; store cold and sealed, and don't count on years.
