Can You Freeze Dry Strawberries?
Yes. Strawberries are one of the best fruits to freeze dry — they turn intensely sweet and crunchy while keeping their color and vitamins.
Freeze Drying Suitability
This is an excellent freeze drying candidate. Strawberries are mostly water with very little fat, so they dry cleanly and store for years.
How to Prepare It
Slice into even pieces about 6–10 mm thick, or leave small berries whole with a slit. Arrange everything in a single, even layer on the trays so it dries uniformly.
Expected Texture
Light, crisp and airy with a concentrated sweet-tart flavor.
Storage
Once fully dry, seal it in Mylar bags with an oxygen absorber and keep it cool, dark and dry. Because it is low in fat, properly sealed it stays shelf-stable for a very long time.
Rehydration
Eat as a crunchy snack, crumble over cereal, or rehydrate briefly in water for a softer berry.
Common Problems
Slices that are too thick dry slowly; keep pieces uniform so the whole tray finishes together.
