Can You Freeze Dry Tofu?

Freeze Drying Suitability
This is an excellent freeze drying candidate. Tofu is mostly water and protein with modest fat, so it stores well.
How to Prepare It
Press out excess water, cube evenly, and spread in a single layer. Arrange everything in a single, even layer on the trays so it dries uniformly.
Expected Texture
Light and spongy dry; absorbent and tender when rehydrated.
Storage
Once fully dry, seal it in Mylar bags with an oxygen absorber and keep it cool, dark and dry. Because it is low in fat, properly sealed it stays shelf-stable for a very long time.
Rehydration
Rehydrate for stir-fries, soups and meals; it soaks up flavor well.
Common Problems
Very few; pressing out water first speeds drying.
