Can You Freeze Dry Watermelon?
Yes. Watermelon freeze dries into surprisingly candy-like, intensely sweet crisps.
Freeze Drying Suitability
This is an excellent freeze drying candidate. Watermelon is over 90% water with almost no fat, so the flavor concentrates dramatically.
How to Prepare It
Remove seeds and slice into even pieces about 8–12 mm thick. Arrange everything in a single, even layer on the trays so it dries uniformly.
Expected Texture
Light, airy and crisp with a burst of concentrated sweetness.
Storage
Once fully dry, seal it in Mylar bags with an oxygen absorber and keep it cool, dark and dry. Because it is low in fat, properly sealed it stays shelf-stable for a very long time.
Rehydration
Best eaten dry as a snack; it doesn't rehydrate back to fresh melon.
Common Problems
Because it's almost all water, yield is small — a lot of melon makes a little product.
