This is an excellent freeze drying candidate. Broccoli is low in fat and keeps its nutrients and green color when dried.
How to Prepare It
Cut into small florets and blanch briefly before drying. Arrange everything in a single, even layer on the trays so it dries uniformly.
Expected Texture
Light and crunchy dry; tender when rehydrated.
Storage
Once fully dry, seal it in Mylar bags with an oxygen absorber and keep it cool, dark and dry. Because it is low in fat, properly sealed it stays shelf-stable for a very long time.
Rehydration
Add to soups and casseroles, or rehydrate as a side.
Common Problems
Large florets dry unevenly; keep them small.
