Freeze Drying Suitability
This is an excellent freeze drying candidate. Peas are low in fat and hold their color and nutrients well through drying.
How to Prepare It
Blanch briefly, then spread the peas in a single layer. Arrange everything in a single, even layer on the trays so it dries uniformly.
Expected Texture
Light and crunchy dry; tender and sweet when rehydrated.
Storage
Once fully dry, seal it in Mylar bags with an oxygen absorber and keep it cool, dark and dry. Because it is low in fat, properly sealed it stays shelf-stable for a very long time.
Rehydration
Toss into soups, rice and meals dry, or rehydrate in warm water.
Common Problems
Very few; blanching first keeps the color bright.
