Can You Freeze Dry Corn?

Freeze Drying Suitability
This is an excellent freeze drying candidate. Corn kernels are low in fat and store very well after drying.
How to Prepare It
Use cooked or blanched kernels off the cob; spread in a single layer. Arrange everything in a single, even layer on the trays so it dries uniformly.
Expected Texture
Crunchy dry, tender and sweet once rehydrated.
Storage
Once fully dry, seal it in Mylar bags with an oxygen absorber and keep it cool, dark and dry. Because it is low in fat, properly sealed it stays shelf-stable for a very long time.
Rehydration
Add straight to soups and meals, or rehydrate in warm water.
Common Problems
Very few — corn is one of the most reliable vegetables to freeze dry.
