Can You Freeze Dry Carrots?
Yes. Carrots freeze dry excellently, keeping their color, sweetness and nutrients.
Freeze Drying Suitability
This is an excellent freeze drying candidate. Carrots are low in fat and dry into a stable, long-lasting product.
How to Prepare It
Peel and dice or slice thin; blanching helps preserve color. Arrange everything in a single, even layer on the trays so it dries uniformly.
Expected Texture
Crunchy dry; tender when rehydrated.
Storage
Once fully dry, seal it in Mylar bags with an oxygen absorber and keep it cool, dark and dry. Because it is low in fat, properly sealed it stays shelf-stable for a very long time.
Rehydration
Add to soups and meals, or rehydrate for cooking.
Common Problems
Thick pieces dry slower; keep the dice small and even.
