Can You Freeze Dry Chocolate?
Not recommended. Chocolate is mostly fat and sugar with little water, so there's essentially nothing to freeze dry.

This is not recommended for freeze drying. Cocoa butter is fat, and freeze drying only removes water — so chocolate just stays chocolate.

There's no prep that helps — the low water and high fat make it unsuitable.

Even with the water removed, it doesn’t store or perform well after freeze drying, which is why it isn’t recommended.
Rehydration
Chocolate is already shelf-stable on its own, so freeze drying adds nothing.
