This is an excellent freeze drying candidate. Marshmallows are sugar and air with no fat, so they dry into a crisp, stable candy.
How to Prepare It
Leave whole or halve larger ones; spread with space between them. Arrange everything in a single, even layer on the trays so it dries uniformly.
Expected Texture
Puffy, crunchy and melt-in-your-mouth.
Storage
Once fully dry, seal it in Mylar bags with an oxygen absorber and keep it cool, dark and dry. Because it is low in fat, properly sealed it stays shelf-stable for a very long time.
Rehydration
Eat dry as a snack or drop into hot cocoa.
Common Problems
Very few; they expand a lot, so leave room on the tray.
