Can You Freeze Dry Gummy Candy?
Yes. Gummy candy freeze dries excellently, puffing into crunchy, intensely flavored bites.
Freeze Drying Suitability
This is an excellent freeze drying candidate. Gummies are sugar and water with no fat, so they puff and crisp beautifully.
How to Prepare It
Space them out; they expand to several times their size. Arrange everything in a single, even layer on the trays so it dries uniformly.
Expected Texture
Light, crunchy and airy with concentrated fruit flavor.
Storage
Once fully dry, seal it in Mylar bags with an oxygen absorber and keep it cool, dark and dry. Because it is low in fat, properly sealed it stays shelf-stable for a very long time.
Rehydration
Eat dry as a novelty crunchy candy.
Common Problems
They expand dramatically; leave plenty of space between pieces.
