This can be freeze dried with a few conditions. Cucumber is almost entirely water with no fat, so yield is very low and it can't rehydrate crunchy.
How to Prepare It
Slice thin and even; expect a lot of shrinkage. Arrange everything in a single, even layer on the trays so it dries uniformly.
Expected Texture
Very light, papery crisps with a mild flavor.
Storage
Once fully dry, seal it in Mylar bags with an oxygen absorber and keep it cool, dark and dry. Because it is low in fat, properly sealed it stays shelf-stable for a very long time.
Rehydration
Best as a light snack or ground for seasoning; it won't rehydrate to fresh slices.
Common Problems
Almost all water, so a large amount yields very little dried product.
