How to Prepare It
Trim, cut into pieces and blanch briefly. Arrange everything in a single, even layer on the trays so it dries uniformly.
Expected Texture
Crunchy dry, tender when rehydrated.
Storage
Once fully dry, seal it in Mylar bags with an oxygen absorber and keep it cool, dark and dry. Because it is low in fat, properly sealed it stays shelf-stable for a very long time.
Rehydration
Add to soups and meals, or rehydrate as a side dish.
Common Problems
Very few; cut to a consistent length for even drying.
