Can You Freeze Dry Green Onions?
Yes. Green onions freeze dry excellently into handy flakes for cooking.
Freeze Drying Suitability
This is an excellent freeze drying candidate. Green onions are watery and low in fat, so they dry fast and rehydrate well.
How to Prepare It
Wash, dry and slice into thin rings. Arrange everything in a single, even layer on the trays so it dries uniformly.
Expected Texture
Light and crisp; easily crushed or added whole.
Storage
Once fully dry, seal it in Mylar bags with an oxygen absorber and keep it cool, dark and dry. Because it is low in fat, properly sealed it stays shelf-stable for a very long time.
Rehydration
Sprinkle straight into soups, eggs and noodles, or rehydrate briefly.
Common Problems
Very few; the aroma can transfer, so consider a separate batch.
