This is an excellent freeze drying candidate. Mushrooms are watery and low in fat, so they dry light and rehydrate quickly.
How to Prepare It
Clean and slice evenly; small mushrooms can be left whole. Arrange everything in a single, even layer on the trays so it dries uniformly.
Expected Texture
Light and crisp dry; meaty and tender when rehydrated.
Storage
Once fully dry, seal it in Mylar bags with an oxygen absorber and keep it cool, dark and dry. Because it is low in fat, properly sealed it stays shelf-stable for a very long time.
Rehydration
Add to soups, sauces and risottos, or rehydrate in warm water.
Common Problems
Very few; slice evenly so thick and thin pieces finish together.
