How to Prepare It
Spread a thin, even layer on a lined tray. Arrange everything in a single, even layer on the trays so it dries uniformly.

Crisp flakes dry; fresh and chunky when rehydrated.
Storage
Once fully dry, seal it in Mylar bags with an oxygen absorber and keep it cool, dark and dry. Because it is low in fat, properly sealed it stays shelf-stable for a very long time.
Rehydration
Rehydrate with water for dip, or use flakes as seasoning.
Common Problems
Very few; oily add-ins like guacamole should be left out.
