Can You Freeze Dry Sweet Potatoes?
Yes, with conditions. Cook or blanch sweet potatoes first for the best texture and rehydration.
Freeze Drying Suitability
This can be freeze dried with a few conditions. Sweet potatoes are starchy and low in fat; cooking first makes them rehydrate cleanly.
How to Prepare It
Cook or blanch, then dice, slice or mash before drying. Arrange everything in a single, even layer on the trays so it dries uniformly.
Expected Texture
Crisp dry; soft and sweet when rehydrated.
Storage
Once fully dry, seal it in Mylar bags with an oxygen absorber and keep it cool, dark and dry. Because it is low in fat, properly sealed it stays shelf-stable for a very long time.
Rehydration
Rehydrate for mash, soups and baby food, or snack on dried slices.
Common Problems
Raw sweet potato rehydrates poorly; cooking first is strongly recommended.
